Our philosophy respects the old wisdom of Messinian olive cultivation while embracing modern precision agriculture.
We use careful pruning, responsible soil management, drone-assisted applications and continuous field observation to support the trees without unnecessary intervention. Theonios is luxury farming with discipline, patience and respect.

Every drop of Theonios originates from our own groves. Nothing is outsourced, nothing is rushed.
Each tree is observed individually — its structure, its load, its needs — ensuring balance between growth, fruit and longevity. This level of attention cannot be industrialized. It can only be practiced.
Pruning is not maintenance; it is decision-making.
We shape each tree to optimize light distribution, airflow and energy allocation. Some branches are removed to strengthen others. Some trees are left untouched. The objective is always the same: clarity, balance and future quality.

Harvesting is carried out entirely by hand, with precision and care.
We avoid aggressive methods that can stress the tree or damage the fruit. Each olive is handled as a fresh product, not a commodity — preserving its integrity from the very first moment.

Time is critical to quality.
Our olives are transported and processed at the mill within hours of harvesting, ensuring maximum freshness, low oxidation and preservation of aromatic and phenolic compounds. This immediacy defines the purity of Theonios.

There is no fixed calendar — only observation.
From pruning to harvest, every action is guided by real conditions: weather, tree behavior and fruit development. This sensitivity to timing defines the difference between ordinary olive oil and exceptional oil.
